Summery Vegetable Pasta Salad....

I love pasta, I won't lie, I could eat it every single night and be completely fine with it. My family, not so much. I know they get tired of it... But it's so easy and you can do so much with it!
Last summer in an effort to find something to do with a whole bunch of zucchini I had from our co op I created this little dish. It's really simple and some may think boring but simple is what I like. You don't need a whole lot to have really great flavor.

Summery Vegetable Pasta Salad
1 medium zucchini
a handful of cherry tomatoes
feta cheese
bow tie pasta
salt and pepper to taste
1/2 of a lemon squeezed
drizzle of olive oil
parsley

Directions;

Get your pasta cooked, drained and cooled. I run mine under cold water in the colander if I'm in a hurry. Chop up your zucchini, tomatoes... put them in a bowl, throw your feta cheese in. You can use however much you want. My girls LOVE feta so I usually end up using a whole container in this dish. Add your cooled pasta and toss together well. Squeeze your lemon juice in, drizzle with olive oil, combine gently. Throw in your parsley (I forgot it this evening) and season with salt and pepper.
Simple and delicious!
