Cinnamon Roll Breakfast Cake

Have I mentioned how picky my son is? He likes a handful of things... breakfast is probably the easiest to get him to eat. He LOVES cinnamon rolls but I refuse to buy them at the grocery, full of "stuff" that I don't want them eating. So, when I found this cinnamon roll cake recipe, I had to try it. So easy and surely it tastes like a cinnamon roll...
I started mixing it up this morning he immediately turned up his nose. "I wanted chocolate waffles not CAKE, I don't even like that cake... I would rather have a cinnamon ROLL" UGH..... but I trudged on and did not give in. While it was in the oven he was sniffing around in the kitchen... but would not admit that it smelled delicious.
When I took it out he looked at it, mouth watering I'm sure... no emotion.


I cut him a piece and he ate it, still not telling me he liked it. But he did... he liked it a lot. It smells and tastes like a cinnamon roll and is SO darn easy... I tell you, try it!

Cake:
  • 3 cups flour
  • ¼ teaspoon salt
  • 1 cup sugar ( I reduced my sugar to 1/2 cup)
  • 4 teaspoons baking powder
  • 1 ½ cups milk ( I used organic soy milk)
  • 2 eggs
  • 2 teaspoons vanilla
  • 1/2 cup (1 stick) real butter, melted
Topping:
  • 1 cup (2 sticks) real butter, softened
  • 1 cup brown sugar
  • 2 tablespoons flour
  • 1 tablespoon cinnamon
Glaze:
  • 2 cups powdered sugar
  • 5 tablespoons milk (again organic soy milk)
  • 1 teaspoon vanilla

Grease a 9x13 inch baking dish and preheat your oven to 375*. Mix your dry ingredients together. Add in eggs, vanilla and milk. Mix well, then slowly pour in the melted butter. Continue mixing. I did this all by hand with a mixing bowl and spatula, easy easy! Pour into your baking dish.
Mix your topping together, drop by spoonfuls into batter and then swirl with a butter knife or spatula.
Place in oven for 18-22 minutes.

Mix your glaze and set aside. Once cake is finished, drizzle the glaze over the top and you're finished! Enjoy.
